After facing setbacks brought on by the COVID-19 pandemic and a Lupus diagnosis, husband and wife duo Ernesto and Lyana Rodriguez are taking big steps to grow their business by opening a storefront in the Cedar Bluff area. Knoxville’s first authentic Cuban bakery, Pastelito’s offers a variety of puff pastries, savory sandwiches, and other delicious desserts. Ernie and Lyana are focused on opening the retail store soon and feel it’s the perfect time to enhance their brand as well.

Knox Box Karaoke

Co-owners, Harold Goldston III and Hayden Mosier, are making an impact in the Knoxville community with an all-inclusive, judgment-free karaoke bar for anyone looking to let loose and have fun! Knox Box Karaoke offers a unique environment for first-timers and regulars interested in belting out some tunes (often in support of a good cause). Moving forward, this team hopes to expand their impact by focusing on social media marketing and growing the private rental sector of their business.

Femeika Elliott is a nurturer and healer with a passion for maternal health and wellness through food. After her own experience with pregnancy and motherhood, she saw a need to provide in-home meal support services and culturally-inclusive wellness coaching to mothers during the first 8-12 weeks postpartum. Femeika hopes to take The Lotus Program to the next level with the help of branded print material and dedicated marketing strategies.

Maggie Klotz (Ph.D., HSP) is a licensed clinical psychologist and the owner of Knoxville Counseling & Psychological Services. Through an integrative approach to therapy, she helps guide patients on their journey towards healing in a safe, comfortable, and affirming environment. After years of working with patients who identify with marginalized groups, Dr. Klotz is excited to continue building her business and hopes to increase her brand awareness in the community so she can help more patients thrive.
